Strawberry Cupcake with Chocolate Ganache and Buttercream Frosting

 

 

 

Strawberry Cupcakes:

  • 1 package of strawberry cake mix
  • Cupcake liners
  • Muffin Pan

Follow baking instructions on the package. Do not fill liners to the top – fill about 1/3 of the way. Once baked the cupcake should be well below the liner -the chocolate ganache will fill the space

**I switch out milk for water on all boxed mixes. **

Chocolate Ganache:

  • 12 oz. semi-sweet chocolate morsels
  • 3/4 cup heavy whipping cream
  • 6 Tbsp butter
  • Saucepan

Heat cream and butter and stir. Once they start to combine mix in chocolate morsels. Remove from heat. After 20 to 30 seconds start to stir the mix until the chocolate is glossy and smooth. Pour over cupcakes while the mixture is still warm. Let it cool down before adding frosting.

 

Vanilla Buttercream Frosting:

  • 1 stick of butter softened
  • 3 to 4 cups of powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • Mixer

Place the butter, 2 cups of sugar, half the milk, and all the vanilla. On the medium speed of an electric mixer, beat until smooth and creamy, about 3 to 5 minutes. Gradually add the remaining sugar, a little at a time Make sure to beat well after each addition. The icing should be thick enough to be of good spreading consistency. Icing can be pipped or spread on cupcakes.

Finish decorating with sprinkles or even a small strawberry! You can also swap out the Vanilla Buttercream frosting for a chocolate frosting.

**You can use either the vanilla buttercream frosting recipe above or a canned buttercream/vanilla frosting. **
