A Fall Favorite: Hearty Chili - Polk County Moms

As far as I am concerned, Chili is the perfect food. It’s fast, simple, and works in any kind of weather.  It is without a doubt my favorite comfort food.  I make a Chili bar with different toppings and let everyone add what they want. Different types of cheese, chopped onions, diced tomatoes, Fritos, tortilla strips, cilantro leaves, sour cream, and sliced jalapenos. FYI Fritos are a must with chili.

hearty chili in a bowl with sour cream and cheese

  • 1 LB ground pork
  • 1 LB ground sweet (mild) Italian sausage
  • 1/2 onion (any kind), diced
  • 4-5 cloves garlic, minced
  • 2 tbsp chili powder
  • 2 tsp kosher salt
  • 2 tsp dried oregano
  • 1 tsp dried cumin
  • 1 22oz can tomato sauce
  • 1 15oz can of Bush’s pinto beans in chili sauce

  1. Combine pork, sausage, onion, and garlic in stockpot and brown.
  2. Add in spices and cook for 2-3 mins allowing the spices to toast.
  3. Mix into the meat well.
  4. Add tomato sauce and pinto beans and sauce. (See notes)
  5. Bring to a boil and then reduce to a simmer for 25-30 min stirring occasionally

  • if not using pinto beans in a chili sauce, drain the beans and add them and add an additional 8 oz of tomato sauce.
  • If you like your chili a little sweet and spicy add in 1/4 cup of sweet baby Ray’s bbq sauce.
  • if you want a little extra fall flavor add some chopped pumpkin to the chili.
